Shrimp Tofu Cakes...

(Yield: 5 Servings)

RecipeIngredients:
1/2 lb Med. Shrimp (Shelled, deveined, and chopped)
1 lb Firm tofu
1/4 cup Green onion (chopped)
2 tbsps Corn starch
1 Large Egg (beaten)
1 tsp Salt
2 tps Sesame oil
Dash of pepper
2 tbsps Vegetable oil
Preparation:
1. Preheat oven to 375ºF. Mean while, in a bowl, mash tofu and stir in
cornstarch, chopped shrimp, green onion, vegetable oil, salt, sesame oil, pepper, and
beaten egg. Mix well. Spread shrimp mixture onto a greased baking pan (approx.
10 x 10 x 2 inch). Bake for 25-30 minutes.
2. Remove from oven and allow to cool. Cut tofu cut
into 3 inch square pieces and serve with ketchup. |
