Ingredients:
10 ea Chow Fun Noodles
1 lb Beef flank steak (thinly sliced across grain) *
5 tb cooking oil
2 cloves garlic (minced)
1/2 md onion ( peeled and sliced)
1 tb soy sauce
1/4 ts Sugar
1 tb Oyster sauce

For marinate:
1 tb soy sauce
1 tb Cornstarch
1 ts Pepper
1 tb sesame oil

Garnish
1 c Fresh bean sprouts

Preparation:
1. In a mixing bowl, marinate beef with soy sauce, cornstarch, pepper, egg white, and sesame oil.  Set aside for 15 minutes.   Mean while, cut the chow fun into noodles about 1/2 inch wide.

2. Heat the wok and add 2 ts of the cooking oil.  Add the noodles in the oil and cook until they are very hot and begin to color just a bit on the edges.  Remove noodle and put into serving platter; set aside.

3. Heat the wok again and add 3 ts of the cooking oil.  When oil is not, add garlic.  Chow for a moment and add the onion.  Stir for 30 second just until very hot but not over cooked. 

4. Remove to the vegetables to a serving platter.  Heat the wok a third time and add 2 ts of cooking oil.  When oil is hot, stir in the the meat. 

5. Stir until it begins to brown.  Return the vegetables, the noodles tot the skillet.  Add soy sauce, oyster sauce, and sugar. Mix well.  Add the bean sprouts, toss just a minute or so and  serve. 

* Beef can be substituted with chicken or barbecue pork.
