Ingredients:
4 cup Flour, whole wheat
1 tsp Salt
3 Eggs, lightly beaten
1 cupWater
3/4 cup Oil

Preparation:
1. Sift whole wheat flour in bowl with salt. Gradually add eggs and water, make a very soft dough.  Divide into 12 balls,  cover with a damp cloth and set aside for at least 1 hour.

2. Spread out each ball on a well-oiled table top, pulling the edge gently with hands to strech it out as wide and as thin as possible.  Dust the surface with flour and fold over and over to make a fan.

3. Roll up the pleated dough to make a curled ball and leave to rest for 15 minutes.   Pat the ball into circles about 6" in diameter.

4. Rub a little oil on one side. Heat a griddle, fry each paratha with a little oil. Cook until both sides turn golden brown, turning once or twice. Serve hot.
