Ingredients:
2 lbs Potatoes, peeled
1 Onion, finely chopped
1 Egg; beaten
1/4 tsp Cayenne
2 tbsp Cilantro, fresh; chopped
Salt to tase
All purpose flour
Vegetable oil for frying

Preparation:
1. Cook potatoes in boiling water for about 30 minutes.  Drain and mash them until smooth.

2. Add onion,egg,cayenne,cilantro, salt to the mashed potatoes, mix all the ingredients together throughly.

3. Roll the mixture into a ball about 1" diameter, then roll it in the flour and flatten it slightly.  Repeat this until the mixture is used up.

4.Heat the oil in a large skillet over medium heat.  Fry the potato cakes in the hot oil for 5 mintutes, turning once or until they are golden brown.  Drain them on the paper towels before serving.
