Ingredients:
2 tbsp Vegetable oil
1/2 tsp Black mustard seeds
2 cup Basmati rice
3 cup Water
1 tsp Salt
1 cup Frozen spinach, thrawed

Preparation:
1. Heat oil in pot. Add mustard seeds, saute for 10 to 20 seconds. Add rice and stir-fry for 1 minute.

2. Add water, salt and spinach. Cover,  bring to a boil, reduce heat to very low.   Simmer  till the rice is almost done, 15 to 25 minutes.  Serve hot.
