Ingredients:
4-6 skinnless and boneless chicken breasts
2 tbsp. Olive oil
1 Clove garlic, minced
1 small Onion, minced
1-1"  Ginger root, minced
1 cup  Shelled, roasted, unsalted peanuts, pulverized in a blender or chopper
1 tbsp. Soy sauce
1 tsp. Turmeric juice of 1 lime
3    Chili peppers, minced
1 cup  Water
1 large Onion, cut into rings
1 tbsp. Olive oil

Preparation:
1.  Cut chicken into small cubes.  Saute chicken in oil until cooked.

2.  Remove from heat. In a blender, put garlic through water ingredients and set on "liquify." Blend until smooth. Put mixture in double boiler, cover, and cook until somewhat thickened, at least 20 minutes.

3.  Saute onion rings until translucent.

4.  Mix chicken and sauce. Serve over cooked rice, place onion rings on top.
