Bites Of Asia
(Yield:4 servings)

2 lb Fillet fiish, preferably sea bass or
mackerel
1 tsp Salt
Oil, for deep frying
2 tbsp Margarine
2 small Onions, sliced
1 tsp Sambal Oelek
1/2 tsp Laos
1/2 tsp Lemon grass
3 tbsp Tamarind juice
Pinch of ground ginger
1 tsp Brown sugar
1 tbsp Sweet soy sauce
Preparation:
1. Cut fish into serving portions and rub salt all
over. Feep-fry and drain on absorbent paper.
2. Heat oil and saute sliced onions until
lightly brown. Add sambal oelek, laos, lemon grass, tamarind juice,
ginger, brown sugar and soy sauce. Heat thoroughly.
3. Place fried fish in deep serving dish and pour sauce
over it. Serve with rice. |
