12 each Fresh asparagus
2 tbsps Sake
1/3 tsp salt
1/3 tsp pepper
1 1/3 lb (150g) Crab meat (or process crab meat)
4 medium Green Onion
1 large Eggwhite
1 tsp sesame oil
1 tbsp cornstarch

1/2 cup water
1/3 tsp salt
1 1/2 ginger juice (grate ginger, place in cheese cloth squeeze out juice)
Preparation:
1. In a bowl, water, salt, and ginger
juice together. prepare the sauce by mixing all the Cut off the bottom of the green
asparagus. Cut the 1 inch pieces and place it in a cooking pan. Sprinkle the asparagus
with 2 tbsps of sake and 1/3 tsp salt. Cover the pan and cook at low heat for 4-5 minutes.
Remove to plate and set aside.
2. Chop the green onion into small pieces.
Place shiitake mushroom in water for 30 minutes; drain, remove stalks, and cut into thin
slices.
3. In a bowl, beat eggwhite well and set
aside. In skillet or cooking pan, heat 1 tbsp cooking oil to hot. Add green onion,
shiitake mushroom, and then premixed sauce. Bring the sauce mixture to boil and add
eggwhite. Stir for 30 seconds and pour the egg sauce on the asparagus. Serve |
