Ingredients:
2/3 lb Mackerel
1/4 tsp Salt
1/4 tsp Pepper
1 med. Green onion (cut into small pieces for garnishing)
4 tbsps Cooking oil
1 tsp Flour
---Tomato Sauce---
2 med. Tomato (ripe)
2 small Shallot
10 Mushrooms
3/4 cp White wine
2 tbsps  Ketchup
3 Oz Butter
1/4 cp     Cream
1/3 tsp    Salt
1/4 tsp    Pepper
2 tsps     Cooking oil

Preparation:
1. Dice tomato with peel on.  Thinly cut the shallot and cut mushrooms into 4 quarters.  Set aside.

2.  In a pan, heat 2 tbsps of cooking oil and stir fry tomato, shallot, and mushroom for 5 minutes.  Add white wine, ketchup, 1 cup of water and cook on med. heat for 3-4 minutes, or sauce is 1/2 the amount of original.   Then add butter, cook till thicken a little, then add cream, salt, pepper.   Turn off heat.

3.  Sprinkle mackerel with salt and pepper and thinly coat with flour.  Heat 4 tbsps of cooking oil in a pan and cook mackerel until cook.  Once cook add sauce, mix and transfer to a plate.  Serve, garnish with green onion.
