Chinese Sausage Salad

(Yield: 2 servings)

1/2 lb. sliced Chinese sausage (available in most Asian
market)
1 tbsp. sliced shallot
1 tbsp. sliced onion
1 cucumber, sliced
5 chopped chilis
1 sliced tomato
1 tbsp. lime juice
1 tsp. fish sauce
1 tsp. sugar
Preparation:
1. Fry the sliced Chinese sausage in vegetable oil for about 2 - 3 minutes.
Remove from heat and drain excess oil.
2. In a bowl, combine sausages with the cucumber slices,
onion, chilis, shallot, and tomato and set aside.
3. Mix the lime juice, sugar, and fish sauce. Pour mixture
onto the other
ingredients. Serve over a bed of lettuce. |
