Noodles with Pineapple...

(Yield:4 servings)

2/3 lb Somen or hiyamugi noodles
1/2 ea Fresh
pineapple (chopped or use pineapple
tidbits)
--Sauce--
4 tbsps Soy sauce
1 c Coconut cream (boiled and cooled)
1 tbsp Lime juice
2 tbsps Sugar
--Garnishes--
3 ea Green onions (chopped)
2 tsps Red pepper flakes
2 tbsps Cilantro (chopped)
2 tbsps Ginger (sliced thin)
Preparation:
1. Boil the noodles for 2 or 3 minutes in water or until cooked. Immedieately rinse in cold water & then drain. Spread noodles on a
large platter & sprinkle with the chopped pineapple.
2. Mix the sauce ingredients & pour over the
noodles. Sprinkle with the green onion, red pepper flakes, cilantro & ginger. Serve. |
