1 1/2 lb Prawns (shelled and deveined)
1 tb Massaman curry paste*
2 cup Coconut milk
2 medium Onions, cut into bite size
1 tb Cooking oil
1 tsp Sugar
1 tsp Lime juice
salt to taste
* commercial massaman curry paste is available most Asian grocery stores
Preparation:
1. Heat the oil in a large pan, add prawns and saute' until they
turn a light pink then remove and set aside.
2. Add the massaman curry paste into the oil and
stir-fry for 2-3 minutes, then add coconut milk, onion and slowly bring to boil.
3. Add prawns, sugar, lime juice and salt, lower heat
and allow to cook slowly for a further 5 minutes. Transfer to
a serving dish and garnish with kaffir leaves. |
