4 medium size crabs
1 cup lean ground pork
1 small onion (chopped)
2 loves garlic (minced)
1 tsp fresh ginger (minced)
1 tsp coriander root (chopped)
2 finely chopped coriander leaves
1/2 cup coconut milk
1 tbsp cornstarch
1 egg, lightly beaten
1 tsp salt
1/2 tsp ground pepper
2 cup cooking oil for deep-fry
Preparation:
1. Cook the crabs in rapidlly boiling water. Carefully remove
the top shells and set aside.
2. Extract all meat from the body and claws and shred
finely.
3. Place all the ingredients into a bowl and mix
thoroughly.
4. Transfer the mixture into the crab shells and
place in a steamer for 30 minutes.
remove, set aside and allow to cool.
5. Just prior to serving, deep-fry the stuffed shells
in hot oil for 2-3 minutes, until the top is a golden brown. |
