Mushroom Soup...
Bites Of Asia
(Yield: 4 servings)
Vote For This RecipeIngredients:
3 cup Vegetable
stock
1 tsp Nam Prik Pow sauce
1 inch Lemon grass, finely chopped
3 Kaffir lime leaves, finely chopped
1 tsp Sugar
2 tbsps Lemon juice
2 oz Oyster mushrooms, coarsely separated
-OR- button mushrooms
2 sm Fresh red or green chilies, crushed to split open
Preparation:
1. In a large pan, bring the vegetable stock to the boil and
stir in the Nam Prik Pow sauce.
2. Add the remaining ingredients and simmer,
stirring well until the mushrooms are just cooked but still al dente. Pour into
a serving bowl and garnish with coriander leaves. |
