(Yield: 3 Servings)

Ingredients:
6 eggs (Hard-boiled and peeled)
3 cups Cooking oil
3-4 cloves Shallots (finely chopped)*
2-3 cloves Garlic (minced)
2 tbsps Palm sugar or brown sugar
1-2 tsps Fish sauce
1/4 cup Hot water
7 sprigs Cilantro or Chinese parsley
2 cups Vegetables**

Preparation:
1. In a wok, heat oil on a medium heat and stir-fry egg until golden brown. Set aside to cool, then cut eggs into half lengthwise.

2. In a sauce pan, heat 1 tablespoons of oil, stir- fry garlic and shallots until brown. Place on a paper towel to drain.

3. In a bowl, dissolve palm sugar with hot water; then add fish sauce to mix well. Stir in garlic and shallots.

To serve, set eggs on a plate and top with sauce. Garnish with Cilantro or Chinese parsley.

* Can be substituted by ready-fried garlic and onion.

**Can be substituted by Asparagus, Baby corn, Bell peppers, Carrots, Green Cabbage, Mushrooms, Tomatoes, Water chestnuts.
