Fried Chili Pork Chops
(Yield: 4 Servings)

Ingredients:
2/3 lb pork chops

---Marinade---
1 tsp wine
1/2 tsp curry powder
1/2 tsp dark soy sauce
1/2 tsp salt
1/2 tsp sugar
1/2 tbsp coconut milk or evaporated milk
1/2 small egg
1 tbsp corn starch

Preparation:
1. Wash, wipe and pound pork chops. Marinate for half an hour.

2. Heat up enough oil in frying pan or wok. Shallow-fry pork chops on one side first, when they are ready turn them over. For shallow-frying, cover the wok partly with lid to ensure even and quick cooking. It can also prevent hot oil from splitting out. Serve on plate in whole or in small pieces.
