Chicken with Zucchini and Green Onion

Yield: 3 Servings

Ingredients:
1/2 lb Chicken breast (cut into bite size pieces)
1 med. Zucchini
1 bundle Green onion (cut into 2 inch lengths)
1 clove Garlic (minced)
2 tsps Fish sauce
1/2 tsp salt
1/4 tsp pepper
2 tbsps Vegetable oil
1/4 cup chicken stock
or water
1 tsp Corn starch mix with 2 tbsps of water

Preparation:
1. Combine the chicken, fish sauce, pepper, and salt.  Mix well and set aside and allow to marinade for 30 minutes.

2. Mean while, wash the zucchini, cut in half lengthwise, and then cut each half into 2 inch thick pieces.  Cut the green onion into 2 inch lengths.

3. When ready to cut, bring 2 tbsps cooking oil to hot in a wok or skillet.  Add garlic and stir for 10 seconds.  Then add chicken and cook for 3-4 minutes on medium heat.  Add chicken broth and cook for another 2 minutes.

4.  Add the vegetables, cover, and cook for 2 minutes.  Remove the cover, mix well and slowly stir in cornstarch mix.  Slowly mix till sauce thicken.  Turn off heat and serve with steam rice.
