Beef with Water Spinach (Bo Rau Muon Xao) Bites Of Asia (Yield: 4 Servings) Ingredients: 6 Oz Rump Steak (Remove fat & slice thinly) 1 Medium Onion (Chop finely) 1 tsp Black Pepper 1 1/2 Tbl Fish Sauce (Nuoc Mam) 1 Tbl Cornstarch 1 Bundle Fresh Spinach (Rinsed & cut each leaf into 3 pieces) 1 Large Tomato (Slice into thin wedges) 1 Clove Of Garlic (crush garlic) 3 tbpsps Oil Preparation: 2. Heat 1 1/2 tablespoons of oil in a frying pan. Add remaining garlic and stir fry until fragrant. Add spinach and stir fry for 3 minutes. Add remaining fish sauce and tomato. Stir fry 2 minutes, then remove to a heated serving platter. 3. Heat remaining oil in frying pan. Add meat and stir fry for 5 minutes. Add 2 tablespoons water if meat sticks to pan. Remove meat from pan and sprinkle over spinach. Sprinkle with pepper and serve. |
