Ingredients:
5 oz Cellophane noodle
10 oz Crab meat
3 oz Fresh mushroom (sliced)
4 oz Bamboo shoots (drained and sliced)
1 bundle Green onion (cut into 2 inch lengths)
3 Garlic cloves (crushed)
2 tbsps Vietnamese fish sauce
1 tsp Sugar
1/2 cup Chicken broth
3 tbsps cooking oil

Preparation:
1. In warm water, soak the cellophane noodle for 30 minutes or until soft.  Drain, cut into 3 inch lengths, and set aside.

2. In a wok or frying pan, bring cooking oil to hot.  Add in garlic and sauté for 30 seconds or until it starts to turn brown.  Then, add in crab meat and stir-fry for 45 seconds.  All together, add the cellophane noodle, bamboo shoot, and onion and stir-fry for another 2 minutes.  Make sure to mix well.  Combine the chicken broth and fish sauce and stir into the noodle.  Reduce heat to medium and cook for another 2-3 minutes or until all the liquid is gone.

3.  Turn off heat; transfer noodle to plate, sprinkle with some black pepper, and serve.
