Ingredients:
3/4 lb medium shrimp (peeled, deveined, shells reserved)
1 large Tomato (cut into thin wedges)
1/4 Pineapple (fresh or 1 can of chunky pineapple )
1 small Onion (thinly sliced)
1/4 lb Bean sprouts
4 tbsps Lime juice (or vinegar)
4 tbsps Fish Sauce
2 small Chili peppers (chopped)
2 tbsps Sugar

--Optional--
2 tbsps Souring herb (can be found in Asian groceries or substitute with cilantro)
2 Oz Spongy vegetable stem, slice in 1/4 thick slices (Can be found in Asian groceries)

Preparation:
1. Slice the shrimps in half.   In a bowl, marinade the shrimps with 1 tbsp fish sauce and a dash of pepper.  In a saucepan, heat 2 tsps cooking oil.   Add the onion and shrimps and  sauté briefly.  Add 5 cups of water, cover,  and bring to boil over high heat.

2. Add tomato, pineapple, spongy vegetable stem and cook on medium heat for 3-4 minutes.   Stir in vinegar and the remaining 3 tbsps fish sauce.   Allow to simmer for 4-5 minutes.

3.  Add the chili pepper, beansprouts, and mint.  Transfer the soup to bowl and serve hot.
